New Mexican Mild Chile Flakes - This is a fully ripened dried New Mexican chile pepper.  These chile peppers are grown in New Mexico are generally hotter than the Anaheim peppers in California.  The New Mexican chile has a bright scarlet color and an earthly mild chile flavor. It is used to make classic red chile sauces and in Southwestern cuisines.

New Mexican Mild Chile Flakes - This is a fully ripened dried New Mexican chile pepper.  It is similar to the Anaheim chile which was brought to Anaheim, California in the early 1990’s, originally from New Mexico. The Anaheim chiles are mild in heat and range from 500 to 2500 Scoville heat units. The chile peppers grown in New Mexico are generally hotter. They are light green and slender, averaging about 6 to 7 inches in length. The New Mexican chile has a bright scarlet color and an earthly mild chile flavor. It is used to make classic red chile sauces and in Southwestern cuisines.

The “Green” chile pepper is the unripe version of this chile. These chile peppers grown in New Mexico are generally slighter hotter than the younger green chile pepper.  The New Mexican chile has a bright scarlet color and an earthly mild chile flavor.

Our New Mexican Chile Flakes are offered in a reusable 4 oz. glass spice bottle with a quality plastic grinder top filled with 1.3 oz. of New Mexican Chile Flakes.  These grinders only crush the chile flakes to release their spice.  They do not grind the flakes into a powder/granules.
