Jamaican Jerk Seasoning - This is our version of the classic Jamaican Jerk Seasoning, which contains: lime zest sea salt, demerara sugar, garlic flakes, allspice, onion flakes, cracked black peppercorns, cayenne pepper, cinnamon, thyme, lime zest and cumin.
This seasoning is classically used on chicken. We prefer to use it on chicken thighs as they are moister than the chicken breast meat. You could use this seasoning on an entire chicken. The best method of preparation for this Jamaican Jerk Seasoning is to lightly coat your chicken with vegetable oil and heavily grind the jerk seasoning all over your chicken. Then let is rest in the refrigerator for at least 30 minutes. The longer the marinating time the better. If you can marinate it for 24 hours, great. Then grill of oven roast it. It should get a little charred, but as with most grilled items the lower and slower the temperature the better, so your chicken/meat does not dry out.
